POTATO SOUP


 This broccoli and cheddar soup is absolutely perfect (in the slow cooker!)

* ingredients :

°4 c (1,000 ml) chop broccoli heads

°1/3 onion, finely chop

°3 c shredded carrot

°4 c (500 ml) vegetable (or chicken) broth

°1 tsp salt

°1/2 tsp pepper

°1/8 tsp nutmeg

°3 tsp butter

°1/3 c (85 ml) flour

°1 cup (250 ml) cream 10,ups (500 ml) shredded cheddar cheese

*Preparation:

Add broccoli, onion, carrots, broth, salt, pepper, and nutmeg to slow cooker and simmer for 4 hours. In a small saucepan, melt the butter, add the flour and whisk. Take 1 cup of the liquid from the slow cooker and add it very slowly to the saucepan, whisking constantly. Adding cream slowly, beat constantly. Adding this mix to slow cooker. Adding cheddar cheese (1 c at a time). to blend together. Close the slow cooker and simmer for 30 minutes. Serve & garnish with  little extra cheese if you like.
