Ham and Cheese Egg Muffins

1/2 c milk (I used skim)
2 green onions sliced thin
8 oz. ham steak cubed
1/2 tsp salt
1/4 tsp black pepper
12 large Eggs
1/4 tsp garlic powder
3/4 c shredded cheddar cheese divided



1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.

2. Apply cooking spray in a muffin tin.

3. Add spices, eggs, and milk into a large mixing bowl. Whisk until well blended.

4. Add the green onions, ham, and 1/2 cup of shredded cheddar cheese. Stir until well combined.

5. Transfer the batter into the prepared muffin tins and spread it evenly.

6. Top each tin with the rest of the cheese.

7. Place the muffin tins inside the preheated oven and bake the batter for 30 minutes or until a toothpick comes out clean after inserting it in the middle.

8. Remove from the oven and allow the muffins to cool for a few minutes at room temperature.

9. Serve warm and enjoy!
