Bisquick Chicken Pot Pie

Ingredients:

2 cloves garlic, minced
½ c carrots, finely diced
4 tbsp butter
½ c onions, finely diced
1 Russet potato, diced
1/2 tsp dried Rosemary
3 tbsp flour
2 c cooked chicken, diced or shredded
1 can Cream of Chicken Soup
½ c half and half can also use milk
½ c frozen peas
2 c chicken broth
½ c celery, finely diced
1/4 c dry white wine, optional, can also use chicken broth
½ tsp dried thyme leaves
½ tsp turmeric, optional, gives it a golden colour

Bisquick Topping

½ c milk
1 large Egg, beaten
1 c Bisquick

 

Directions:

1. Prepare the oven and preheat to 175 degrees C or 350 degrees F.

2. Apply cooking spray in a 9×13-inch casserole dish.

3. Place a large pan on the stove and turn the heat to medium.

4. Add butter and allow it to melt.

5. Add the celery, carrots, and onions. Sauté until soft.

6. Add the garlic and sauté until aromatic.

7. Add the potatoes and chicken, then cook until tender.

8. Add the flour and toss until well coated. Cook for another minute.

9. Add the cream of chicken soup, wine, and chicken broth. Stir until well blended and scrape the bottom of the pan to get the browned bits.

10. Add the dried rosemary, thyme, and turmeric. Stir until well mixed.

11. Add the half & half, then stir until well mixed. Allow the mixture to boil.

12. Reduce the heat to medium and simmer for a few minutes until the potatoes are soft.

13. Add the frozen peas and stir until well blended. Remove the pan from the stove. Add more seasonings if needed.

14. Transfer the mixture into the prepared casserole dish and spread it evenly.

15. In a mixing bowl, add the egg, milk, and Bisquick. Stir until well blended.

16. Pour the mixture on top and spread it evenly.

17. Place it inside the preheated oven and bake for about 40 minutes or until the top turns golden brown.

18. Remove from the oven allow it to rest for a few minutes at room temperature.

19. Garnish with freshly chopped parsley.

20. Serve and enjoy!
